This dish is easy to make, packed with flavour and healthy but also feels indulgent.

Ingredients
- 2 salmon fillets
- 6 tbsp of parsley, thyme, rosemary, finely chopped (mix together and save half for next stage)
- zest of a lime
- 2 tbsp vegetable oil (1 tbsp for the herb mix marinade and 1 tbsp for pan frying the salmon)
- 350g new potatoes, washed and halved if necessary
- 2 tbsp goose fat or veg oil
- 4 whole cloves garlic, skins left on
Method
- Preheat the oven to 180° fan and heat the oil in a baking tray.
- Combine half of the herb mix with the lime zest and the vegatable oil and rub all over the salmon. Leave to one side.
- Put the potatoes in a pan of salted water, bring to the boil, then cover and simmer for 5 minutes.
- Drain the potatoes and return them to the empty pan and bash them slightly with the end of a rolling pin. Then tip them into the hot oil and throw in the whole garlic cloves.
- Season generously with salt and peper and roast for 30-40 minutes until golden and crispy around the edges.
- About 10 minutes before taking the potatoes out, pan fry the salmon, skin side down for 5-6 mins on a medium heat. Then flip the salmon over and cook on the other side for another minute or two until the salmon turns opaque.
- Take the pototoes out of the oven and sprinkle over the remaining herb mix, then serve with the salmon and veg of your choice.
