Baked Harissa Chicken

More use for your harissa paste

Ingredients – Serves 2

  • 2 chicken breasts
  • 1 onion sliced
  • 2 peppers sliced (whatever colour you have in the fridge)
  • harissa paste
  • rapeseed oil
  • salt and pepper to taste

Method

  1. In a lidded casserole dish layer the onions, peppers and place the chicken breasts on top.
  2. Spoon over a generous amount of harissa paste depending on how hot you like it.  If you haven’t made the harissa paste in my previous blog you can buy it in any supermarket.
  3. Drizzle over a glug of oil and season to taste.
  4. Bake in the over for 25-30 minutes at 190° (180° fan assisted) or until the chicken juices run clear.
  5. Serve with rice and your favourite veg 🙂
