Quick and easy colourful healthy dinner

Ingredients – Serves 2
For the marinade
- 2 tsp soy sauce
- 1 tbsp mirin
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil (or substitute with rapeseed oil)
- 180g pack of raw prawns
For the stir fry
- 1 tbsp rapeseed oil
- 2 cloves garlic crushed
- 2 large red chillies sliced length ways, seeds removed
- 1 bell pepper (any colour) sliced
- 4 spring onions washed, chopped in half and then sliced length ways
- 2-3 broccoli florets roughly sliced
- basmati rice and a handful of coriander to serve

Method
- For the marinade, combine the ingredients in a small bowl and add the prawns and set to one side, then cook the rice and keep warm before starting the stir fry.
- Heat a wok over a high heat and add a splash of the oil. Once smoking add the prawns (reserving the marinade for later) and stir fry for 1-2 minutes.
- Remove the prawns from the wok and set to one side.
- Heat another splash of oil in the wok and add the garlic, chillies and peppers with one tablespoon of water. Stir fry for 1-2 minutes then add the spring onion and broccoli and cook for another 1-2 minutes.
- Add 2 tablespoons of the leftover marinade and return the prawns to the wok and cook for a final 1-2 minutes.
- Serve with basmati rice and garnish with roughly chopped coriander.
