More use for your harissa paste

Ingredients – Serves 2
- 2 chicken breasts
- 1 onion sliced
- 2 peppers sliced (whatever colour you have in the fridge)
- harissa paste
- rapeseed oil
- salt and pepper to taste
Method
- In a lidded casserole dish layer the onions, peppers and place the chicken breasts on top.
- Spoon over a generous amount of harissa paste depending on how hot you like it. If you haven’t made the harissa paste in my previous blog you can buy it in any supermarket.
- Drizzle over a glug of oil and season to taste.
- Bake in the over for 25-30 minutes at 190° (180° fan assisted) or until the chicken juices run clear.
- Serve with rice and your favourite veg 🙂
