Rosemary & Garlic Guacamole

A twist on the classic guacamole. A doddle to make and just really really tasty!

Rosemary, chilli & garlic avocado

Ingredients

  • 1 very ripe avocado, flesh scooped out
  • 1 tsp fresh rosemary, leaves picked and roughly chopped
  • 1 small clove garlic, roughly chopped
  • generous pinch of salt
  • 1 small green chilli, deseeded and finely chopped
  • 1-2 tsp lime

Method

  1. Sprinkle the salt on the garlic to soften it and aid the process of turning it into a paste.
  2. Put the rosemary, garlic, salt and chilli into a pestle and mortar and pound until smooth but rustic. If you don’t have a pestle and mortar just gently blitz it in a food processor.
  3. Add the avocado flesh and pound until fluffy, then squeeze in the lime juice. Give it one final stir and and enjoy!
