Super quick snack
Avocado on toast is so simple and a great way to use up an avocado that is verging on becoming over ripe. If you are making this for one I recommend using the whole avocado and just using half of the mix on one piece of toast, then leave the other half in the mixing bowl tightly sealed with clingfilm. It’s a great wholesome treat to dip carrots or water biscuits into if you can’t wait for dinner but don’t want to spoil your appetite. It will keep in the fridge for up to a day or so.
Ingredients
- 1/2 a ripe avocado
- 1 piece of toast (just use your favourite bread)
- 1 spring onion very finely chopped
- squeeze of lemon
- pinch of salt
- pomegranate seeds to garnish or chopped fresh coriander is a good substitute
- 1tsp extra virgin olive oil
Method
- Simply mash the avocado and mix in the onion and a pinch of salt, and squeeze in the a dash of lemon.
- Serve on a piece of toast, top with pomegranate seeds and drizzle over the olive oil. Any salad in the fridge is a lovely accompaniment.
Tip
As mentioned above you can use the whole avocado and double up on the quantities then keep the leftovers tightly sealed with clingfilm in a bowl in the fridge for round two or a tasty dip ?
