Quick lunch for one
The pomegranate seeds really make this salad and I can’t encourage you enough to include these lovely little jewels that make your food look and taste fantastic. I have recently converted to buying the packs of pomegranate seeds already extracted from the fruit! Also buy some pomegranate molasses for your store cupboard from any major supermarket to zhuzh up your dressings ?
The Puy Lentils & Quinoa mix that I like are cooked and ready to eat. They are not wildly expensive and unopened they keep for nearly a year so you can stock up on these!
Ingredients
- 3-4 slices of halloumi
- a dash of rapeseed oil
- generous handful of Puy Lentils & Quinoa (ready to eat)
- a few slices of red onion very thinly sliced
- salad leaves
- pomegranate seeds
For the dressing
- 2tsp extra virgin olive oil
- 1tsp pomegranate molasses or the juice of half a lemon
Method
- Once you have prepared the halloumi and red onion, using a little rapeseed oil pan fry the sliced halloumi on a medium heat for a few minutes on each side until golden and part charred.
- Simply layer your plate with a handful of salad, the sliced onion, halloumi and scatter with the puy lentils. Decorate with pomegranate seeds.
- To make the dressing simply put the chosen ingredients in a small jar and shake it well and drizzle over your salad 🙂
Tip
This could make a very healthy summer evening meal but if you have a carnivorous partner (as I do!) then grill a couple of good quality pork sausages, roughly chop them and add to the salad.
