Quick lunch for one
Try halloumi with beetroot and sliced fresh chilli for a quick, tasty light lunch.
Ingredients
- 3-4 slices of halloumi cheese
- 2 pieces of cocktail beetroot roughly chopped
- 5 or 6 cherry tomatoes halved
- 1 red chilli finely sliced seeds retained if you like it hot!
- 2 spring onions or 1 large salad onion sliced
- generous handful of salad leaves
- a drizzle of rapeseed oil or extra v olive oil
- a squeeze of lemon or lime
Method
- Lightly toss the salad leaves in the oil and lemon or lime.
- Dot the halved cherry tomatoes and beetroot around the salad and scatter the spring onion. I prefer these lovely large salad onions as less fiddly.
- Using a little rapeseed oil pan fry the sliced halloumi on a medium heat for a few minutes on each side until golden and part charred.
- Carefully place the halloumi onto the salad and sprinkle with the onion and chilli.
- Squeeze a little more lemon or lime juice over to zest it up.
